Pimped Up Sweet Potato Wedges

This is short and sweet potatoes! Apologies for the pun, but it’s true. Not everything you cook has to be time consuming or challenging. In actual fact my food philosophy is the complete opposite of that - it’s about deliciously simple. And those of you who catch up with me often, know that I also love a one pot wonder. I believe that the things you cook everyday should be easy and yummy but also something that you are proud to put on the table in terms of both look and taste. Some basic skills and techniques, some good flavour combinations, real ingredients and of course, your CombiSteam make all of this possible.

These are the best snack or quick Friday night munchie dinner. They are also great to add to your next Mexican night or bbq for everyone to share. I’m not going to chat on and on because I risk spoiling the whole short and sweet thing so let’s get on with it. This Queen doesn’t have time to waste.

serves 4+

3 medium sweet potatoes
1 tbs olive oil
¼ tsp ground nutmeg
¼ tsp smoked paprika
¼ tsp ground oregano
salt and pepper

Method:

  1. Peel the sweet potatoes and cut into wedge sized pieces*. Place into a large mixing bowl with the olive oil. Season with salt and pepper and add the nutmeg, paprika and oregano. Toss to coat and combine. Spread the wedges onto two trays lined with baking paper.

  2. Select Combination Steam (Hot Air+Steaming) on your CombiSteam. Set the temperature to 220°C. (For variable Steam select 10% or low) Allow to pre-heat.

  3. Add the trays to the pre-heated oven. Cook for 15 minutes or until tender and golden browned. Remove and serve with the toppings listed below or just as they are.

Toppings:

Quick Salsa - 2 large ripe tomatoes (diced), ½ red onion (finely diced), 6 fresh basil leaves roughly torn, pinch caster sugar, salt & pepper, 1 tsp red wine vinegar, 2 tsp olive oil, 70g can kidney beans (drained and rinsed) - combine all ingredients just prior to serving.

Zingy Guacamole - 1 large ripe avocado, 1 lime (zested and juiced), handful chopped coriander leaves, 2 finely chopped spring onions (roots discarded), 1 tbs olive oil - mash the avocado and combine with all other ingredients just prior to serving.

Sour Cream or Creme Fraiche

grated cheese, extra chopped spring onions, lime or lemon wedges, chilli sauce, jalapenos from a jar, a sprinkle of your favourite seeds or nuts or whatever else takes your royal fancy

There you have it loyal ones. These could be this weekend’s perfect half time snack. Delicious, simple and even nutritious. I hope you enjoy.
